Blue Spirulina Electrolyte Tonic

The recipe: Blue Spirulina Electrolyte Tonic

Method: blender and nut milk bag strain Yield: about 12 oz (355 ml), 1 serving

Ingredients

  • Cucumber, 1 large (about 215 g), roughly chopped
  • Honeydew melon, 1 1/3 cups cubed (about 215 g), one of the least acidic fruits, which is exactly why it is here
  • Coconut water, 1/2 cup plus 1 tablespoon (130 ml)
  • Fine sea salt, 1/8 teaspoon (about 0.6 g)
  • Blue spirulina powder, 1/2 teaspoon (about 1.5 g), start here and add up to 3/4 teaspoon (about 2 g) for a deeper blue
  • Optional: 3 to 4 fresh mint leaves, for a cooling lift with no added acid

Note: every ingredient here is intentionally low-acid. That is the design, not a coincidence. Keep citrus and pineapple out, or the blue shifts to teal.

Steps

  1. Roughly chop the cucumber (215 g) and add it to the blender with the honeydew (215 g) and the mint leaves if using. Blend until smooth, adding only a small splash of water if it needs help moving. You want a pale, gently sweet base, the blank canvas for a true blue.
  2. Set a nut milk bag over a bowl or wide jug. Pour in the blend, gather the top, and squeeze until the pulp is nearly dry. Save the pulp for the zero waste step.
  3. Stir the 1/2 cup plus 1 tablespoon (130 ml) coconut water and the 1/8 teaspoon (0.6 g) sea salt into the juice. This rounds out the electrolytes and nudges the pH into the range where the blue is most stable.
  4. In a small cup, whisk the 1/2 teaspoon (1.5 g) blue spirulina with a splash of the juice into a smooth, lump-free slurry, then stir it back into the rest. Work up to 3/4 teaspoon (2 g) total if you want a deeper blue.
  5. Serve immediately over ice, cold and out of direct sun. The cool, low-acid base keeps the color electric far longer than an acidic juice would.
  6. It is best right away. Sealed in a glass jar in the fridge it keeps up to 24 hours, and the color slowly softens as it sits.

Tip: always dissolve the spirulina in a little liquid first, or it clumps. For a layered look, hold back some of the pale juice and pour the blue over it.

Zero waste next step

Rinse the honeydew seeds and blend them with water and a little sweetener into a melon-seed horchata, and quick-pickle the firm inner rind the way you would watermelon rind. Cucumber ends and peels can infuse a jug of water or go to compost. Freeze the juice pulp into blue ice pops, blend it into a smoothie, or dehydrate it, and compost whatever is left. The spirulina is fully used.
