Skincare Juice

The recipe: glow skin-support juice

Method: blender and nut milk bag strain Yield: about 12 oz (355 ml), 1 serving

Ingredients

  • Red bell pepper, 1 medium (about 120 g), seeded and chopped
  • Carrot, 1 medium (about 60 g), scrubbed and chopped
  • Cucumber, 1/2 medium (about 150 g), chopped
  • Orange, 1 medium (about 130 g of flesh), peeled and segmented, or 1/3 cup (80 ml) fresh orange juice
  • Lemon, 1/2, juiced (about 2 tablespoons / 30 ml)
  • Fresh ginger, 1/2 in piece (about 4 g), peeled (optional)
  • Filtered water, 1/4 cup (60 ml), plus a splash more only if needed to blend

Note: the orange keeps this sweet and drinkable against the earthy carrot and pepper. Leave the ginger out for a milder, cleaner-tasting juice.

Steps

  1. Wash everything. Seed and chop the red bell pepper (120 g), scrub and chop the carrot (60 g), chop the cucumber (150 g), peel and segment the orange (130 g), juice the 1/2 lemon (30 ml), and peel the 4 g piece of ginger.
  2. Add the red pepper (120 g), carrot (60 g), cucumber (150 g), orange (130 g), lemon juice (30 ml), ginger (4 g), and 1/4 cup (60 ml) filtered water to the blender.
  3. Blend on high for about 60 seconds, until fully smooth. Carrot and pepper are firm, so give it the extra time. Add only a splash more water if the blade will not catch.
  4. Set a nut milk bag over a bowl or wide jug. Pour in the blend, gather the top, and squeeze firmly until the pulp is nearly dry.
  5. Pour over ice and drink fresh. For the best carotenoid absorption, enjoy it with a meal that has a little healthy fat, such as avocado, nuts, or seeds.
  6. It is best right away. Sealed in a glass jar in the fridge it keeps up to 24 hours. It will separate as it sits, so shake before drinking.

That leftover pulp is sweet, fiber-rich, and a gorgeous coral color. Fold the carrot and pepper pulp into savory fritters or veggie patties, simmer it into a vegetable broth, or blend it into a soup base. Zest the orange before juicing and save the zest for baking or infusing, then let the spent lemon half scrub and freshen your sink before it composts. The bell pepper core and anything left over composts cleanly, and you can dry and save the pepper seeds to plant.
